Herby Sausage Jambalaya (Serves 4)
Ingredients:
● 400g Lincolnshire sausages (about 4 sausages)
● 1 tbsp olive oil
● 1 onion, chopped
● 2 bell peppers (any color), chopped
● 2 cloves garlic, minced
● 1 tsp turmeric
● 250g long-grain rice
● 1 tin (400g) chopped tomatoes
● 500ml chicken stock
● 1 tsp dried mixed herbs (or thyme)
● Salt and pepper, to taste
● Fresh parsley, chopped (for garnish)
Instructions:
Brown the sausages in olive oil in a large saucepan, then set aside. In the same pan, cook the onion and bell peppers for 5-7 minutes, then add garlic for another minute. Stir in the turmeric and rice for 2 minutes. Pour in the chopped tomatoes and chicken stock, and add the sliced sausages back in. Bring to a boil, then cover and simmer for 20-25 minutes until the rice is tender. Season with salt and pepper, and garnish with parsley before serving. Enjoy!
